Etymon Projects, the team behind hospitality venues Poetica, The Charles Grand Brasserie & Bar, and Loulou Bistro, Boulangerie and Traiteur, is partnering with The Langham, Sydney to open a new restaurant and lounge bar inside the luxury hotel. While there’s no name yet, the opening is slated for mid-April following a refurbishment of the existing restaurant and bar spaces.

“The Langham, Sydney evokes the kind of timeless luxury seen in Europe’s most beautiful hotels and we’re thrilled to partner with this spectacular property,” explains Etymon CEO, Lisa Hobbs. “We see an incredible amount of opportunity in hotel dining and bars here and believe The Langham, Sydney’s classic beauty and location will help set the scene for our team to deliver a very special experience for Sydney.”

While the concept for the restaurant and lounge bar is still being finalised, Etymon’s Director of Culinary, Sebastien Lutaud, reveals where inspiration is coming from.

“The concept is inspired by the relaxed and attentive service of the great restaurants found in iconic luxury hotels of Europe with a touch of the welcoming French, Italian, and Spanish Mediterranean coast,” explains Lutaud.

“The centre of the restaurant will feature a striking seafood bar with bar stools to sit with a glass of wine and enjoy a deliciously fresh crab omelette made in front of you. While a beautiful space, the restaurant will be very approachable and a destination for Sydneysiders as well as visitors. The location and surrounds of the Langham Sydney are a perfect backdrop.”

Etymon’s Director of Wine, Paolo Saccone adds: “The restaurant wine program will highlight Australian and New Zealand classics alongside fantastic varietals from the Mediterranean coast including Italy, south of France, and Spain. We want to create a lounge bar that rivals the great hotel bars of Paris, London, New York. A luxurious but relaxed and approachable bar where vintage spirits and cocktails are the hero.”

Etymon Projects will also operate The Langham Sydney’s room service and functions and events menus.

“The Langham, Sydney is a key hotel within the Langham Hospitality Group portfolio and we are thrilled to enter into this partnership with renowned hospitality operator Etymon who we believe to be the perfect partner for our restaurant and bar operations,” explains Jeffrey van Vorsselen, Regional Vice President – Operations, Pacific for Langham Hospitality Group.

The venue names and team, including a head chef, will be announced in the coming weeks.
